The Best Thermomix Guacamole Recipe

Hands down the best guacamole recipe we know. We make a chunky version of this one by hand as well. Which ever way you make it, the end result is a fresh and full of flavour guac.

Equipment

Ingredients

  • 3 small Avocados (or 2 large)
  • 1 small Red Onion
  • 2 cloves of Garlic (2 medium or 1 large)
  • 6 Cherry Tomatoes
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 handful Fresh Coriander (Cilantro)
  • 1 Lime (juice of)

Instructions

  • Peel and quarter the red onion.
    1 small Red Onion
  • Peel and roughly chop the garlic.
    2 cloves of Garlic
  • Juice the lime.
    1 Lime
  • Halve the avocados, remove the stones and skins and then cut each half into four pieces.
    3 small Avocados
  • Put the quartered onion, chopped garlic, fresh coriander, lime juice, salt and pepper in the Thermomix jug.
    ½ teaspoon Salt, ½ teaspoon Black Pepper, 1 handful Fresh Coriander
  • Blend on level 4.5 for 5 seconds.
  • Scrape down the contents of the jug, back towards the blades.
  • Add the tomatoes to the other ingredients in the jug.
    6 Cherry Tomatoes
  • Blend on level 4.5 for 3 seconds.
  • Scrape down the contents of the jug towards the blades again.
  • Add the chunks of avocado to the other ingredients in the jug.
  • Blend on level 4.5 for a final 3 seconds.
  • Enjoy!

Notes

  • If you want to keep any stored Guacamole looking as vibrant as possible when it comes back out of the fridge, lay a few thin slices of lime on top of it and keep it stored in an airtight container when you put it away. This helps to prevent the Avocado from blackening so quickly.
  • We make this Guacamole without Chilli. If you do want to add Chilli, add a single de-seeded, chopped, small Jalapeño. You would add this at the same time as the Red Onion. This would give it a nice warm glow, without overpowering the other flavours and upsetting the balance.
