Put a pan of water on to boil and add a generous pinch of salt, if desired.
Preheat the oven to 180°C /350°F/Gas Mark 4
Add the Pasta to the Boiling water and cook for the lower end of the cooking guide for the type of pasta that you are using, For example, the Fusilli Bucati has a cooking guide of 9-11 minutes and so we cook it for 9 minutes.
17½ ounces Pasta of choice
Add all of the cheese Sauce ingredients to the blender and blend until smooth. Then put to one side.
1 ¾ cups Raw Cashews, ½ cup Nutritional Yeast, ½ teaspoon Garlic Powder, ¼ teaspoon Onion Powder, ½ teaspoon Smoked Paprika, 1 ½ teaspoon Sea Salt, 1 teaspoon Light Miso Paste, 2 ½ cups Water
Crumble the Vegan Feta, finely chop the fresh Thyme, then mix both together in a bowl along with the Breadcrumbs .
⅔ cup Vegan Feta, 1 tablespoon Fresh Thyme, ¾ cup Dried breadcrumb
Once cooked, drain the Pasta and then put into an oven proof dish and stir the Cheese Sauce into the Pasta.
Sprinkle the Vegan Feta Crumb evenly over the top of the dish of Mac and Cheese
Bake the Mac and Cheese for 10-15 minutes, until golden brown.
We serve ours with some steamed Green Beans. You can enjoy yours either on its own or with whatever you fancy.
