Our Chive Dip is incredibly versatile, packed with flavour and very simple to make. Enjoy it as a dip with crisps, crudites, hash browns, or pitta breads.
First, juice the lemon. You can do this just by squeezing the lemon or by using a juicer, it's entirely your preference. Just be sure no pips make their way in to the blender.
Add the cashews, lemon juice, water and salt in to the blender. Blend on a high speed for 30 seconds, or until smooth and creamy.
½ cup Cashews, ½ cup Water, ½ teaspoon Sea Salt, 1 teaspoon Lemon Juice
Transfer to a bowl ready for mixing in the chives.
Dice the chives up finely and add to your bowl of cashew cream.
¼ cup Chives
Stir well to combine.
Taste and add more seasoning if desired.
Notes
Make this slightly ahead of time. The longer the chives are in the cashew cream, the more 'infused' it will be, which brings out a stronger flavour. 2-3 hours is plenty. Equally you can make it up a day or two before.
